What will you do?
DEFA is responsible for providing Official Controls at the Isle of Man Meat Plant. You will
primarily work as a Meat Hygiene Inspector at the plant, which is the only approved
slaughterhouse on the Isle of Man, and it is collocated with a cutting plant.
You will also carry out a range of other functions for the Environmental Health Team,
including food, water and environmental sampling.
What does this involve?
You will primarily be expected to carry out the postmortem inspection of red meat animals
and support your fellow meat inspectors and the Official Veterinarian (OV) at the Isle of Man
Meat plant in Douglas. Your Headquarters will be Thie Slieu Whallian, Foxdale Road, St
Johns.
You will also be required to undertake other tasks for the Environmental Health Team
outside of the meat plant, such as visiting premises across the island to take samples of
food, drinking water and bathing water.

Veterinary Auxiliary with the Environmental Health Registration Board (through qualification)
or have completed the relevant Royal Institute of Public Health (RIPH) Level 4 Diploma for

Recruitment process

90 minutes. This consists of a 45 minute informal conversation with members of the
Environmental Health Team and a 45 minute formal interview.
Main job activities
The role of Meat Hygiene Inspector / Environmental Health Technician covers an
extensive and varied range of activities and offers the chance to develop a wide range of
skills. You will be part of a small, professional and hardworking team who support each
other in delivering the Departments statutory functions to protect the health, safety and
wellbeing of the public. Your duties will include: -

Carrying out meat inspection at the slaughterhouse, under the guidance of the OV, in
accordance with all applicable control regulations. This service must be provided at
all times whilst the slaughterhouse is operational.
•
Assisting the OV in the enforcement of the provisions of the Welfare of Animals at
Time Of Killing Regulations 2019 at the Slaughterhouse. In particular to ensure that
animals are treated humanely whilst awaiting slaughter and are stunned in an
approved manner before being slaughtered.
• Assisting the OV in ensuring that animals are only slaughtered by licensed slaughtermen.
• Ensuring compliance with the Transmissible Spongiform Encephalopathies Regulations 2013 and Transmissible Spongiform Encephalopathies Regulations 2019.
• Ensuring ‘specified risk material ‘is correctly disposed of and stained with blue dye prior to transportation to the Animal Waste Processing Plant (AWPP) and ensure correct documentation is issued for its transportation.
• Maintaining proper records as to the number and type of animals slaughtered. To provide a weekly return of the number, species and categories of animals inspected and accurate charges levied for services provided by the Directorate.
• Maintaining proper records as to the meat and offal rejected as unfit for human consumption. Records to be completed in duplicate and presented to IOM Meats for surrender of such unfit food.
• Periodically inspecting the slaughterhouse and cutting room facilities, and monitoring the Plant’s preoperational checks, as and when required by the Environmental Health Team and/or OV.
• Undertaking advisory visits of other food premises on the Island to assist with compliance with relevant hygiene regulations, when the slaughterhouse is not operational.
• Obtaining informal and formal samples of food, drinking water and bathing water from leisure facilities and submitting to the Government Analyst’s Laboratory.
• Maintaining your own and others’, health and safety and undertaking periodic reviews of risk assessments and Safety Management Systems employed by the Meat Plant with the OV and Manager from the Environmental Health Team.
• Carrying out inspections of Poultry Production Plants to ensure compliance with relevant hygiene regulations, as and when required.
• Providing Meat Hygiene inspection training to members of the Department, veterinary students, trainee Environmental Health Officers and trainee Meat Hygiene Inspectors, as and when required.
• To carry out such other duties related to the work of the Department as may from time to time be required by the Director of Regulation.

I have reviewed the recently signed contract, and this stipulates 40 hours "core hours" activity. I am familiar with the current pattern of Monday to Wednesday (Thursday) slaughterhouse cover arrangements and the Thursday/Friday exports and waste plant activities. It would be however helpful if we could agree for some expected daily activity intervals, that would sum up to these 40 hours of activities. I understand that the slaughterhouse might have a certain variability in their activity pattern and that some work hours/days can be extended occasionally, however, the agreed daily activities start time and expected lengths of each working day, would be helpful for me, in my discussions with him.
